you guys, i cooked on a weeknight! this never, ever happens (unless cooking = heating up a frozen burrito). i broke in my new le creuset by making a delicious chicken curry.
the recipe is here. i made some modifications (thanks to the suggestion of a friend):
used cubed chicken breasts instead of chicken parts (i used 4 boneless, skinless breasts) - if you use chicken breasts, it only needs to cook for about 35 minutes
added 1.5x the amount of curry powder and cumin
added chickpeas when i added the tomatoes
used greek yogurt instead of regular yogurt
i served it with brown jasmine rice. delicious!
also the smell coming from your apartment is guaranteed to make all your neighbors jealous.
